Should I buy spices whole or ground?

Whole keeps its flavor longer, sometimes by a year or more, because the volatile oils stay locked in until you crack the seed or grate the pod. Ground is the everyday convenience pick. We carry both so you can match the form to how often the spice gets reached for.

What is the difference between Ceylon cinnamon and regular cinnamon bark?

Ceylon is the lighter, more delicate cinnamon, sweet and floral, the baker's pick. Cinnamon bark powder, the cassia variety most American kitchens grew up with, is the stronger, sharper one, the one for oatmeal, chai, and a deep gingerbread.

How long do bulk spices stay fresh?

Whole spices keep their flavor for two to three years if you store them cool, dark, and sealed in glass. Ground spices are best within six months to a year. Buy the size that matches how often you cook with it.
